I used to eat sandwiches daily. Lately, my tastes migrated away from bread, but I’ll never forget three sandwiches I discovered, in three different decades. Here’s the first:
Kays Gary, a 30-year daily columnist for The Charlotte Observer not only rented his house to my young family in the 1980s, he described a “heaven-on-earth” fried scallop sandwich only sold at a small hut on a bluff overlooking Sunset Beach, NC.
I’m not sure we even hit the beach before hunting down the hut. There I found juicy, crispy, perfectly fried scallops piled high on a buttery bun.
