‘Slower is better’ at Little Rock’s Sims’ Bar-B-Que

Back in 1937, brothers George and Allen Sims and their spouses, Estella and Amelia, founded Sims’ Bar-B-Que. One couple opened a café in the farmland town of Hardscrabble, Arkansas, while the other set up shop in Little Rock.

They determined that the best barbecue takes time for the meat to maximize flavor and developed a sweet BBQ sauce to complement their secret seasoning. Their methods have been passed down three generations to Ron Blakely, the current owner and cook.

Patrons praise the melt-in-your mouth meat, old-school cornbread and family-feel service. Plus, the Slab Dinner Special can reportedly feed a platoon.
